Yes, you can put the NAS in the /etc/hosts file of each client, or use any other method of mapping a domain name to an IP address.
Zt* interfaces behaves mostly like regular ethernet interfaces, and IPv4 addresses are stable unless you click something in the my.zerotier.com configuration pages.
