What would happen if I just had one rule in my flow rules?

That’s absolutely fine, and it will pass any and all traffic through ZeroTier

keep in mind that layer2 is chatty, so if you do no filtering then you’ll ‘waste’ some data if you have network devices that are trying to do other things. the normal ipv4/ipv6/arp filter does help clean this up. Unless you have a good reason to, I think zt’s default filter is a better choice.
